Sausage & Bean Pie: A Comforting Winter Meal

I’m a big fan of pies, especially when winter comes around! Previously on my blog, I’ve posted a recipe for Veggie Cottage Pie which is another of my favourites. Whether you eat meat, or you’re vegan/vegetarian, this Sausage & Bean Pie recipe can be made with real sausages, or meat-free ones.

With plenty of nutrients, Sausage & Bean Pie is a great family favourite and ideal for meal prep. The sweet potatoes, beans and spinach all contain some of the essential vitamins and minerals that you should be including in your diet. Plus, all the other ingredients are healthy and high in protein so you can’t really go wrong with this dish! Check out the full recipe below.

What you’ll need to make Sausage & Bean Pie

1 pack of Quorn/Pork Sausages, sliced

1kg sweet potatoes, peeled and chopped

2 onions, diced

3 garlic cloves. crushed

1 vegetable stockpot

3 cans mixed beans

Bag of spinach

3 chopped carrots

Grated cheese

Method:

– Boil the sweet potatoes in water until soft, then mash with a little milk and butter and set aside.

– In a large pan/wok, fry the onion, garlic and carrot until soft. Then, add the sausages and fry until brown.

– Add the stockpot, spinach and beans and stir everything together to combine. Flavour with salt, pepper ot mixed herbs if desired.

– Transfer the mixture to an ovenproof dish. Top with the sweet potato mash and sprinkle your grated cheese on top.

– Bake in the oven for 20-30 mins, or until golden, then serve and enjoy.
