Aubergine Dahl: A Tasty & Spicy Homemade Dish

Fit in your 5-a-day and have plenty of food to package up into meal prep containers with this Aubergine Dahl. A super quick, no-hassle, healthy recipe.

With high amounts of protein and carbs, this is a great dish if you’re looking to bump up your macros. Aubergine Dahl is vegetarian and vegan friendly, and is packed full of nutrients. When I made this, there was lots left over to save for later which makes it super handy for busy schedules. The best part is, you need only a few ingredients and you can have the whole thing prepared and cooked in less than half an hour! Check out the full recipe below:

What you’ll need to make Aubergine Dahl:

2 sliced red onions

3 garlic cloves, crushed

1tsp ginger

2tsp turmeric

2tsp cumin

1tsp chilli powder

2tsp ground coriander

300g red lentils

1 litre of vegetable stock

1 large aubergine, cubed

2 x 400g cans of chickpeas

Method:

– Cook the onion and garlic in a large pan, then add in all of the spices.

– Pour in the vegetable stock, lentils and aubergine and simmer for 15-20 minutes until the lentils are soft. Stir in the chickpeas with their water if you need a little extra liquid, and cook for another 5 minutes.

– Serve with rice or a side of your choice and enjoy.

If you like spice and and tasty, warming meals, then this is a great one to try. Convenience is always half the battle when it comes to trying to eat healthily, but when you can cook recipes as simple as this, there’s no reason why you can’t make a quick, tasty, healthy and nutrient-rich meal!
