I’m a huge fan of curries when it comes to meal prep, and this Butternut Squash, Apple & Raisin Curry is one of my favourites. I feel like I say this with every recipe, but what can I say? I cook a lot of super tasty things!
The unique thing about this curry is the sweet and savoury elements. There’s the sweetness of the apple and raisins, and the hearty flavour of the potatoes, butternut squash and the spices. Also, the best part is, you’ll squeeze in a few of your 5-a day! Choose from a variety of tasty sides and enjoy this dish in whichever way you please – you’ll have plenty left over for a few more days. Check out the full recipe below…
What you’ll need to make Butternut Squash, Apple & Raisin Curry
2 onions, chopped
3 garlic cloves, crushed
1 x medium butternut squash peeling & cut into cubes
2 x baking potatoes peeled & cut into cubes
2 x cooking apples peeled & diced
100g of raisins
1L vegetable stock
2tsp curry powder
2tsp ginger
1tsp turmeric
Method:
– In a large pan, heat little oil and fry the onion and garlic until brown. Add the butternut squash, potatoes and apple then add in the spices.
– Add the vegetable stock and the raisins then bring the boil and simmer for 15-20mins until the vegetables are soft.
– Serve with couscous, rice, naan or any side of your choosing!
There isn’t an awful lot of work involved in this recipe once the veg is prepared, so always, we’re keeping things nice and simple!
