Quinoa Chilli: A Classic Dish With A Veggie Twist

I love a good chilli and I’ve tried different variations; beef mince, pork mince, Quorn mince and now quinoa! This Quinoa Chilli is low in fat, high in protein and fibre and a is generally a super healthy meal to batch cook. Besides a little bit of chopping, there’s very little prep needed for this meal. It’s mainly just a case of stirring and simmering everything in one pan!

Quinoa is a great high protein alternative for vegans and vegetarians, but even if you do eat meat, it’s an interesting ingredient and makes the meal a bit different to what you’re used to with a chilli. Read on to check out the ingredients you’ll need and to see exactly what you need to make this super tasty and nutritious meal.

What you’ll need to make Quinoa Chilli

2 onions, sliced

3 bell peppers, chopped

2 garlic cloves, crushed

2 x 400g can mixed beans

250g quinoa

3 x 400g can chopped tomatoes

2 tsp chilli powder

2 tsp coriander

1 tsp oregano

2 tsp paprika

2 tsp cumin

Method:

– Cook the onions and garlic in a large pan until soft and then add the peppers, stir in the spices and cook for another couple of minutes.

– Add the tomatoes, a couple of cans of water then stir in the quinoa and simmer for around 20mins, stirring regularly.

– Stir in the mixed beans, coriander and cook for another few minutes then serve!
