Kedgeree Recipe: A Classic & Varied Meal

Fish is a great source of protein so I always make sure I fit a lot of it into my diet. One of the fish-based meals I came across recently is Kedgeree. With all the spices and the rice, Kedgeree has some really great flavour. The eggs are an additional hit of protein and really compliment the other flavours so it’s super tasty dish.

If you want to make Kedgeree, this is what you need:

What you’ll need to make Kedgeree

150ml milk

400g smoked haddock fillets

1 tsp ginger

1 onion, chopped

2 crushed garlic cloves

1 tsp coriander

1 tsp tumeric

250g long grain rice

1 tsp curry powder

350ml vegetable stock

4 eggs

Method:

– Heat the milk and 100ml water in a saucepan, then add the haddock and simmer on a low heat for around 5 minutes. Remove from the heat and set to one side.

– Heat some olive oil in a wok then add the onion, ginger, garlic, tumeric and coriander and cook for 5 mins until the onion starts to brown and soften.

– Add the rice to the wok and stir together with the onions and spices. Add the vegetable stock and bring to the boil, cover and simmer for around 15 mins.

– In a small saucepan boil the four eggs for around 10 mins, then drain them and rinse with cold water. Peel them, cut them into quarters and set aside.

– Remove the haddock from the milk and shred it.

– When the rice mixture is ready, stir through the haddock and eggs and then serve!

I’m really into easy to cook meals and Kedgeree ticks that box for sure. It’s quick to make and is a really handy meal to make if you like to prepare meals in advance to save you time further down the line. Give it a try and see what you think!
