For a tasty meal with a hint of spice and bucket loads of protein, this Cajun Chicken Quinoa is a fantastic dish to make.
The chicken, lentils and quinoa all provide great amount of protein. Even if you’re veggie or vegan, you could swap out the chicken for a meat-free alternative and still benefit from a highly nutritious dish. The Cajun spice and the dried apricot really create some interesting flavours and make the overall dish delicious. It’s also pretty simple and quick to make which makes it ideal for busy people. Like all my favourite home-cooked recipes, you can refrigerate or freeze it as it’s perfect for bulk cooking.

What you’ll need to make Cajun Chicken Quinoa:
2 sliced red onions
500g of diced chicken/meat-free alternative
Cajun seasoning
250g of dried apricots
250g of Puy lentils
200g or quinoa
600ml of chicken/vegetable stock
Method:
– Toss chicken in Cajun spice then fry in a large pan/wok until there is no pink showing. Add the onion and fry until soft and until the chicken is browning.
– In a separate pan, cook the quinoa in the chicken stock for 15-20mins until soft and then add the lentils & apricots and cook for a further 5 mins.
– Drain the excess water from the quinoa, lentils and apricots and then add it to the pan containing the chicken & onions.
– Simmer the whole dish for a couple of minutes on a low heat, stirring well.
– Plate up and enjoy!
