I’ve been a pescatarian since the start of this year and there are so many amazing fish recipes out there to try. Fish is a great source of protein, and one of my favourite fish dishes id Fish Mappas. The spices give the whole dish a really lovely flavour and the recipe will make sure you get a good few portions out of it. With very few ingredients, Fish Mappas is very cheap and easy to make which makes it a great choice if you’re looking for a simple mid-week meal.
If you want to make Fish Mappas, this is what you need:
What you’ll need to make Fish Mappas
4 x haddock (or other white fish) fillets
400g can of coconut milk
500g tomatoes, cut into chunks
2 onions, sliced
3 crushed garlic cloves
3 tsp cumin
2 tsp paprika
1 tsp chilli powder
Method:
– In a large pan, add a small amount of oil and cook the onions and garlic until they start to brown. After 5-10 minutes, add the tomatoes and cook for another couple of minutes.
– Add all of the spices and then pour in the coconut milk and bring it to the boil.
– Add the fish to the mixture and simmer gently for around 10 minutes until it’s cooked through.
– Serve with rice or another side of your choosing and enjoy!
