I have a few favourite foods, but chorizo is definitely up there at the top! Any recipe involving chorizo is a winner in my book, so it’s no surprise that one of my favourite home-cooked meals is Chicken & Chorizo Ragu.
Both the chicken & chorizo are great protein sources making this a really healthy meal. You can also get a good 3-4 servings using the ingredients below so this is a great dinner to make if you’re into your meal prep. It’s also fairly simple to make which for me personally makes it ideal because I’m all about food that’s healthy, tasty and convenient. Check out the method below to see how you can whip yourself up a delicious chicken & chorizo ragu.
What you’ll need to make Chicken & Chorizo Ragu:
225g chorizo
650g diced chicken
500g sundried tomatoes
2 x 400g cans of chopped tomatoes
200ml chicken stock
1 red onion
2 x garlic cloves
Method:
– Fry the chorizo in a large pan/wok until it starts releasing oil, then add the garlic & onions and fry until they’re soft and starting to brown.
– Add in the chicken pieces and cook until there’s no pink, then add in the sundried tomatoes and cook for another few minutes.
– Pour in the chopped tomato & chicken stock then reduce the heat and allow to simmer for around 15-20 minutes. If you like a thicker sauce, you can mix a tablespoon of cornflour and a splash of water in a cup and pour into the pan, stirring well.
– Serve in a jacket potato, with rice, couscous or whatever you fancy & enjoy!
